Callos con hummus
Tripe is usually a side dish of a chick peas. This recipe is an update version of the old Castile stew with the influence of the Arab flavours carried by North Africans who are moving to Spain.
Many cuisine-related sources describe hummus as an ancient food, and it is possible that hummus was eaten when the moors used to rule Spain.
The earliest known recipes for a dish similar to hummus bi tahini are recorded in cookbooks published in Cairo in the 13th century.
