Ensalada de tomate y anchoas con mousse de aguacate
A mousse (French "foam") is a prepared food that incorporates air bubbles to give it a light and airy texture. They are typically made with whipped egg whites.
Although the first reference about mousse was written in the French cookery book
"Les soupers de la cour" (1755), the savory version is not really popular in Spain. But the classic Spanish dressing of extra virgin olive oil, vine vinager and salt can be replace with a vegetable mousse.
