The croquette (from the French croquer, "to crunch")is very popular in Spain. Although the bechamel is from France, they are filled with Iberian products as a ham When my grandma was young, if there was food left, croquettes were made better use of it. Nowadays Serrano Ham croquettes have gained popularity and they are served as a tapas all around Spain.
