Pisto a la bilbaina con huevo de codorniz

Pisto a la Bilbaína is a version of a ratatouille which usually has just courgettes and green peppers in tomato sauce and lightly scrambled with eggs. This recipe is topped with a quail egg.
Quail eggs are considered a delicacy in many countries and fit perfect haute cuisine in miniature stardars, characteristic from basque pintxos.
