Pollo con tomate frito

Tomato sauce was an ancient condiment in Aztec food. The first western person to write of what may have been a tomato sauce was Bernardino de SahagĂșn, who made note of a prepared sauce that was offered for sale in the markets of Tenochtitlan (Mexico City today). Then, Spaniards brought the use of tomato to Europe. Tomate frito is as common tomato ingredient of Spanish cuisine as fresh tomatoes. When made by first low frying garlic and onion pieces in oil with spices and then adding the tomato puree it is known as Sofrito, used as a base in Spanish, Portuguese, and Latin American cooking.
