Patatas alioli
he origin of mayonnaise is the town of Mahon in Balearic Islands. Salsa Mahonesa means literally sauce from Mahon.
When the French took Minorca from the British in 1756, their finest conquest was this creamy combination of egg and olive oil.
The French Larousse Gastronomique suggests mayonnaise is a French sauce but historians have found documents dating back to the 16th century which prove the Spanish origin.
