Iberian ham

Iberian ham is one of the most famous Spanish delicacies, and it is as rare as it is expensive. The black pig is a semi-domesticated breed which, lives in the "dehesa" a lightly forested area dotted with evergreen stone oaks and cork trees. In the fall the arcorns, which give the meat a particularly aromatic taste, drop from the tree. The animal now develops an astonishing appetite and puts on about 60 or 80 kilograms within few months.
