Ensaladilla rusa
Olivier salad sometimes referred to as Russian salad. is a traditional salad dish from Russia, which is also popular in Spain where it is called ensaladilla rusa and is present as a tapa in many bars. The original version of the salad was i nvented in the 1860s by Lucien Olivier, the chef of the Hermitage, one of Moscows most celebrated restaurants. The exact recipe — particularly that of the dressing — was a jealously guarded secret, and when the restaurant closed in 1905 the recipe was lost unrelentingly. The “Spanish” Russian salad is far from the genuine one because it’s made up with Mediterranean ingredients non-characteristic of czarist cuisine like Tuna, olives and mayonnaise…
