Cider and apple cake

What I like about Asturias above all is the people's enormous affection for their locally produced cider. The consumption of cider in Asturias is of 54 litres per person/year, probably the highest in any European region. There could be no better celebration of that than this sponge cake, layered apples tossed with cinnamon , then baked and drizzled with a glacé-style icing made from sugar and reduced vintage cider.
