Quesada pasiega
Quesada got her last name from the region in Cantabria where the recipe originated: el Valle del Pas. The first name, on the other hand, comes from the Spanish word for cheese (“queso”), and this why you can often seen her responding to the
name of Cheesecake in recipes that have been translated from Spanish to English. Ironically enough, the traditional recipe does not include cheese among the ingredients, but milk and cuajo (milk curds) instead.
