Rockfish pie is the best answer to them who criticize the new cuisine. This recipe can be found in popular kitchens and in most of the cookery books along the Bay of Biscay shore. A lot of people could think that it's a traditional and ancient-origin recipe but this recipe was created in the 70s by Juan Mari Arzak,considered to be one of the great masters of New Basque cuisine.
