Black pudding is a type of sausage made by cooking blood. In Europe, typical fillers include oatmeal while in Spain it is often replaced by rice. Spanish morcilla has many variants. The most well-known and widespread is Morcilla de Burgos, which its current features don't seem to be older than two and a half centuries, because rice, cultivated in Valencia, didn't become abundant and cheap in Castile until mid 18th.
