fter the anchovy season, the fishing boats set anchor for a sort time before a new "wave" begins to swell. The albacore season gets under way right around the Patron Saint day of San Pedro (June 29th) with announce the beginning of sumer. Much the same as with the pig, virtually all part of the albacore are used.
