Menestra
Ribera de Ebro in Navarre is the centre of one of the best vegetable-producung areas in Spain. Not just vegetable gardens, they are also works of art, dotted with beatiful old lodges.
The artichekes the star of the menestra is stewed, and turn the dish esmerald green. This happens to artichokes if there's enough magnesium in the local water.
