It appears the tortilla started to spread during the early Carlist wars, when farm-wives served to the Zumalacárregui's soldiers a big and thick omelette with less eggs, mixing potatoes and breadcrumbs in the mountains of Navarre. Surprisin gly, Zumalacárregui was pleased and took the idea with him. During the siege of Bilbao, in 1835, the "tortilla de patatas" was an easy, fast and nutritious dish to satisfy the scarcities of the Carlist army
